100% Nero d’Avola. Harvesting is done by hand in small 10 kg crates between the end of August and the beginning of September. The grape skins are macerated at low temperatures for two days to extract sweet and delicate tannins and colouring. Alcoholic fermentation is performed at 20°C for about 12 days. After malolactic fermentation, the wine is aged in French oak barrels for 8 months.
