Taste:
Structured and robust with definite but delicate tannins.
100% Cabernet Sauvignon, a late variety ripening towards the end of September. The grapes are harvested on perfect polyphenolic ripening, destemmed and fermented with their skins for 12 days at 26-27°C, and then further fermented with select malolactic bacteria.
